A Bit of History
Maple sugar was among the first sugars in the nation, eaten by Native Americans, primarily of the Northeast. They froze the maple and scraped off the water that rose to the top, eventually forming a brick, boiled it, or dropped hot rocks into the maple until it cooked. The molded variety may have originated with European Americans in the 18th century although Native Americans used molds as well. Abolitionists used maple in place of cane sugar, which was grown and processed by enslaved people.
