A Bit of History
Rose and violet flavorings were popular in the 18th and 19th centuries, especially among the well-to-do. They were replaced in the mid-1800s by an orchid from Mesoamerica that could not be pollinated outside its native home. An enslaved boy on the French colonial island of Reunion figured out how to pollinate the plant by hand, and that flavoring overtook these floral favorites. The flavoring: vanilla.
